Abstract | The aim of work was to test the effects of two diets on sensory quality of Paracentrotus lividus reared in two sites of Mediterranean Sea, through two panels of assessors. In Cagliari the best gonad colours were observed in wild sea urchins, while in Mar Grande of Taranto, the best colour was assessed in sea urchin fed Diet 2. The firmness and texture of sea urchins fed different diets, in the two sites, were classified as acceptable. The best taste was obtained in sea urchins fed Diet 1 in the Mar Grande (excellent: very sweet), while in Cagliari the best taste was attributed at sea urchins fed Diet 2 (good: sweet). |
